Lunch Box Challenge Day 7: Fish without the chips

My mother loves fish and chips, it was her thing, and oddly enough I disliked seafood as a child. It wasn’t until I had my own kids that I started venturing out to try new foods and I’m glad I did. We have fish 2-3 times a week now. My kids enjoy it, and there’s tons of varieties and ways to cook it you really have no excuse as to why your not trying something other than that same old “fish and chips” . Normally fish and chips is fried battered fish and some sort of fry or greasy side. While I like fried fish it’s not something I can stand to eat all the time plus let’s face it- it’s not healthy!

My idea behind this was quick,  light and simple.

I served this with strawberries and crisp cucumbers with cherry tomatoes

 Other fruits to serve with this would be cherries, or pineapple. Make sure you place a ice pack in this lunch, keep the tarter sauce cold and the fish as well. While you may do this the night before I highly recommend just grilling this in the pan the morning of. It take literally less then 8 minutes to cook. Get everything ready the night before then simply prepare the fish the day of.

Grilled Fish Sandwich with Tarter Sauce

4 fillets of fish, grouper is best for this
2 olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

Tartar sauce ingredients
1/2 cup mayo
2 tablespoons chopped green onions
1 tablespoon pickle relish ( sweet)
1 1/2 teaspoons capers, drained
1 1/2 teaspoons lemon juice or pickle juice
1/2 teaspoon Worcestershire sauce

Combine it all together and chill till you use it.

Directions for the fish
Heat up a skillet with the oil. Sprinkle the fish with salt and pepper. Grill the fillets for about 3 minutes and turn to to cook on other side. Should be flaky when finished.

Assemble the fish sandwich using fresh lettuce, and favorite bread. Do not add the tartar sauce to sandwich until you are ready to eat it. Place it into a small container. Prepare your fruit and vegetable sides. Everything in this lunch is meant to be kept cool so make sure you place an ice pack within the lunch.

Today’s Lunch Box Tip:  Try to prepare lunches the night before. Divide your vegetables and fruit and snacks this way all you need to do is assemble the sandwich the morning of. An easy way to get organized for lunches is grab a plastic bin and place all your containers, zip locks, napkins, plastic spoons or forks and so on. You can even place your snack items, say granola or bars right there near the bin if not in it.  This way you can easily go to one place for everything you need to use. Set aside the same thing in the refrigerator. Set your vegetables and fruit that you’ve made for lunches to one side. It makes for a less chaotic morning and it’s all in one place.
