Lunch Box Challenge Day 9: Take a Garden and Wrap it up!
While yes vegetables are not easy to get the kids to eat all the time but don’t turn away just yet. Hear me out. Getting the kids to eat a vegetable doesn’t have to be hard you just need to find that little flare to make those kids want to dig in. It can be as simple as a sauce. Whenever I dish up dinner with a side of sauce they literally go into battle for the servings. It’s dunk or move out of the way. Sauce makes everything fun! Just find that sauce or dip the kids enjoy and use it as a incentive to get them to eat a helping of vegetables.
Today’s Lunch is vegetables , vegetables and more vegetables. My garden is exploding so why not put it to good use?
Ingredients for The Garden Wrap
Choice of Sand which wrap
Sprouts
Tomatoes sliced
Zucchini julienne
Wild Lettuce mix
*Side this with choice of salsa
Assemble the wrap laying lettuce down in the wrap. Spread sprouts on next a healthy portion. Bulk that baby up with them, and lay down the sliced tomatoes before placing zucchini on top. Jello roll style the wrap up tight and place seam side down in container. You can place a toothpick in these but they are not allowed at school, if of course you are an adult, by all means stab it with a toothpick but let’s not get the kids in trouble with a toothpick at school!
Put salsa in a container for dipping.
Cucumber Salad-
Chopped freshly washed cucumbers
Cherry tomatoes
Fresh mozzarella
Balsamic Dressing
Toss those vegetables together and toss them into a container. Side with dressing.
Pick a fruit to serve it with and your done. Easy right? So what are you waiting for? Go pack a lunch!
Today’s Lunch Box Tip: If you pack apples into the lunch and slice them up before hand wipe the cut apple flesh with a little lemon juice or orange juice. This prevents it from turning brown. My kids will gag if I sent them to school with an apple that turned brown on them. They refuse to even touch it, doesn’t matter how many times I tell them it’s still good! Crazy kids.
