No Bake Cherry Almond Granola Bars
I do many granola bar recipes, with four kids you kind of need them around. They are easy to make, cheaper than store bought, healthier than store bought and it’s just plain fun to make. It’s fun to mix things up, try different ways to create a new bar. This one today is a no bake and sets pretty quick, about two hours. If you put it in the freezer, you’re looking at an hour before you can slice and enjoy.
Ingredients
1/3 cup packed light brown sugar
1/4 cup creamy peanut butter
1/4 cup honey
4 tablespoons unsalted butter
2 cups quick oats
1/2 cup raw quinoa
2/3 cup sliced almonds
1/4 cup pumpkin seeds ( or sunflower seeds)
5 oz dried cherries
Directions
In a medium sauce pan combine brown sugar, peanut butter, honey and butter over medium-low heat, stirring frequently.
Bring sugar mixture just to a boil and then continue cooking for an additional 2-3 minutes stirring constantly, or until sugar dissolves. Do not let this burn! Take it off the heat and stir in oats and quinoa , almonds and seeds until evenly coated. Place parchment paper in an 8×8 inch baking dish making sure the paper hangs over on either side so you can pull out the granola bars and cut them up with ease. Dump the mixture into the lined baking dish and press down evenly. Once it’s all flat and pressed firmly down place in the fridge for about 1-2 hours. Once hardened you can cut and serve!
