Peach Buckle
It’s been a long standing tradition in my house that Sunday is dessert night. Not even sure when, how, why it happened, but it’s been like that for a long time so why ruin a great thing right?
All week I’m in search of an idea and try my best to make a new recipe, even if I change up a previous one the family liked it’s got to be different. The same foods get boring even if we do love them. This week I had to use up some peaches that were going to end up bad, so the search for peach desserts was on! Nothing really spoke to me until I came across some blueberry buckle I had made years ago. It hadn’t been the best, the blueberries just seemed off, the the cake itself was great, just needed a different fruit. Had even made notes to try it with strawberries but seeing how no new notes were made on the card- I hadn’t made it again since!
This turned out so good!
The peaches were ripe enough to be sweet on their own, I had worried it wouldn’t hold up as I’ve rarely baked with peaches before. Didn’t know if they would turn to a mushy mess or not, but this worked out perfectly! Moist cake, and fresh out of the oven warm, just the right amount of sweetness , topped with homemade ice cream, you can’t beat it!

Peach Buckle
Ingredients
- 3 peaches pitted and cut into chunks
- 1 cup flour
- 1/2 stick butter melted
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup brown sugar
- 1 large egg
- 3/4 cup buttermilk
- *1 Tablespoon Butter for Pan
- *2 Tablespoons sugar for topping peaches
Instructions
- Preheat oven to 350F
- **You need a 10in cast iron skillet or use an 8x8 baking pan, Just spray that with cooking spray instead of using the melting butter.
- Using a cast iron skillet cut a tablespoon of butter into the pan and melt it in the oven while you mix the ingredients. Mix all of your dry ingredients in, and then add the buttermilk , egg and melted butter. Mix this together well until it's well combined. Take your cast iron out of the oven and make sure the butter has greased the entire pan including side . Pour your batter into the pan and then put add the peaches on top. Cover as much as the batter as possible, doesn't matter if they are arranged or just dumped in, spread them out if you can. Sprinkle the 2 tablespoons sugar ontop of the peaches and bake for about 45-50 minutes or until the edges are golden brown and toothpick in center comes out clean. Let sit on wire rack for about 30 minutes before slicing. Top with either whipped cream or ice cream!
