Peppered Turkey sandwich with Parsley Aïoli
The weather is getting hot, and so is my kitchen. During the first few waves of heat and straight into summer my kids fall back on eating more sandwiches than ever. This also means I need to make bread more often, which I don’t mind at all. Keeps me busy, this is the first batch of today’s breads cooling off.
Making bread makes me hungry as well so I needed something fast! With the last few slices of sour dough bread I put together a Peppered Turkey sandwich with Parsley Aïoli. I love mixing up different sandwiches, one of my favorite sauces or dressings is fresh Aïoli, of any kind really. Depends on what I have on hand honestly, today I had plenty of fresh picked parsley. This sandwich is super easy, grab any deli meat you want.
Parsley Aïoli
1 cup fresh parsley leaves
1 garlic clove
1 teaspoon olive oil
1 teaspoon mustard
1/4 cup mayo (fat free)
Pepper to taste
Take all the ingredients and put them in a food processor. Process until it’s blended well. I don’t have a processor so I chop everything then add it to the other ingredients to stir and mix. Keep refrigerated and make sure you use it up in a few days.
Easy right? Dress up any sandwich with this easy dressing and enjoy!
