Recipe Challenge Day 25: Lime Chicken Tacos
I used lettuce leaf instead of a soft taco, I’ve gotten so used to doing this for taco’s my kids always ask for it now. I also opted out on the cheese but you can add it in there. This is a great way to use up left over chicken.
1 1⁄2 lb skinless, boneless boneless, skinless chicken breast cubed or shredded or cut
1⁄8 cup red wine vinegar
1⁄2 lime, juiced
1 tsp white sugar
1⁄2 tsp salt
1⁄2 tsp black pepper, ground
2 green onion, chopped
2 clove garlic, minced
1 tsp dried oregano
6 in flour tortilla or lettuce leafs for use as taco shell
1 tomato, diced
1⁄4 cup lettuce, shredded
1⁄4 cup monterey jack cheese, shredded
1⁄4 cup salsa
Directions
Saute chicken in a medium saucepan over medium high heat for about 20 minutes. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano. Simmer for an extra 10 minutes till heated through.
Heat an iron skillet over medium heat. If using a tortilla warm in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas then serve assemble with chicken, topping with your salsa , cheese if using and tomato. If using lettuce spread mixture on leaf and enjoy!
