Recipe Challenge Day 3: Blueberry Morning Baked Oatmeal
Mornings are rough in this house, it’s always crazy. Sometimes , ok more than half the time one or two of the kids are running behind. It’s hard to get them up and running to leave the house on time but I finally found a recipe that jump starts our mornings! Making just enough for the kids and myself to eat before we need to leave- I bring you Blueberry Morning Baked Oatmeal.
It is so delicious! I swear it to you, I know it seems like a lot to do it in the mornings but it’s worth it. It’s really easy to put together, but yes it does take 40 minutes . Skip the fuss and put dry ingredients together the night before, set aside what you need before hand you can do this. Wake up, throw this together and get everyone dressed while it bakes. Mix up the berries and use strawberries, or even blackberries- what ever you do though try it!
Ingredients
1 cup old-fashioned rolled oats
1/4 cup chopped walnuts, divided
1/2 tsp. baking powder
3/4 tsp. ground cinnamon
Pinch of salt
1/4 cup honey
1 cup milk
1 large egg, lightly beaten
2 tbsp. unsalted butter, melted and cooled slightly
1 tsp. vanilla extract
2-3 ripe bananas, peeled and sliced
1 cup blueberries divided
Directions
Preheat your oven to 375
Lightly grease a 2-quart baking dish. Using a medium bowl, mix the oats, walnuts, baking powder, cinnamon, and salt. Stir to combine. In a liquid measuring cup, combine the honey, milk, egg, butter, and vanilla.
Spread the sliced bananas in a single layer over the bottom of the baking dish then top with half of the berries.
Taking the dry ingredients sprinkle it over the fruit. Pour in your wet mixture and sprinkle the remaining berries on top. Bake for about 35-40 minutes. You want the top to be just a little browned, let it cool on a wire rack for about to minutes.
You could make this the night before, set it in the fridge and warm up the next morning, I haven’t tried it that way but I’m assuming it will be just as good.

I think I am the only one I know that is addicted to oatmeal – thankfully it is a healthy addiction. I would love to try this in place of my normal oatmeal pancakes but I would leave out the walnuts (just not a fan).

Other then the bananas which I am allergic to-this sounds like a really good and healthy way to start your day. I doubt I would make this in the morning for just me–but maybe if I prepared it the night before–it really does sound delicious.
