Recipe Challenge: Day 7 – Cheese Crackers

Run out of crackers? Don’t want to run to the store? No worries, make the crackers yourself! 🙂

Awesome aren’t they? I love them! Now go make some yourself!

Ingredients
2 cups of bread flour
2 teaspoons sugar
1 teaspoon table salt
¾ teaspoon baking soda
3 Tablespoons canola oil
3 Tablespoons shortening 4 ounces sharp cheddar cheese, coarsely shredded
½ cup cold water

Extra flour for rolling
Salt for topping

2 or 3 baking sheets

Directions

In a standing mixer bowl, combine flour, sugar, salt and baking soda. Using the flat beater on low speed, mix in the oil and shortening until there are no pieces larger than the size of a pea.  Add in the shredded cheese and beat  until the cheese is broken down into small bits. Takes a few minutes. Add the water and beat for until all the dough sticks in a mass on the beater.

Working on a  clean unfloured surface, knead the dough vigorously for 5 minutes. The dough should be smooth and pliable. Place the dough on the table covering with the bowl and let rest for 30 minutes.
Set a rack in the middle of your oven and preheat to 425°.

 Cut dough into three equal pieces. On a lightly floured surface, roll one piece into a rough rectangle 10” x 15”. Roll out to about  1/16” thick, it takes a bit of time and patience. If the dough sticks sprinkle very little flour down. Once you are done rolling transfer gently to a cookie sheet.  Cutting with a pizza cutter or pasta roller cut the dough into 1 1/2 in squares. Prick dough using a fork so it won’t puff up in the center. Sprinkle with salt.

Bake crackers at 425° for 5 minutes, turn over and bake for a further 3 minutes. Mine cooked way faster than this, in about 2 minutes even though I turned down my oven to 400F By the time I flipped and closed the door, it was ready to take them out again. My first batch came out a little dark, but after that I just cooked a total of only 3 minites. You really can’t step away from the crackers, so check often. The thinner your crackers are the faster they cook, pull them out before they over cook. Remove from oven and cool for 10 minutes

Repeat with remaining dough until all crackers are cooked.

The crackers taste GREAT! I love them, and plan on making tons more. Kids gobbled them up quicker than I could get any more pictures of them too. 🙂
