It’s starting to somewhat feel like fall, which means it’s soup time! Everyone loves some kind of soup don’t they? There are so many kinds out there and so many ways to make them as well. One of my all time favorite soups is chicken , classic, simple hearty and delicious! Whether you want it over rice or noodles , even bread it’s always a family pleaser so today I am going to share with you slow cooker chicken soup! I had made rice the day before so we used that and made some fresh Dinner Rolls .
The rolls are easy to make , check out the recipe when you get a chance to enjoy!

Notes
I cook this in a large slow cooker which is 10 quarts .If you have a smaller one use about half the chicken and other ingretdients.
Ingredients
- 6 fresh boneless, skinless chicken breasts
- 1 tbsp oil
- 1 medium onion chopped small
- 1 tbsp minced garlic
- 3 sweet peppers ( I pick one green 1 red, 1 orange but it's up to you) chopped small
- 4 ounces diced green chiles
- 2 tbsp italian seasonings
- 2 tsp paprika
- 4 cups chicken stock or water or even vegetable stock
- 1 1/2 cups peeled and chopped carrots
- 3 stalks chopped celery
- 2 cups peeled and chopped yellow potatoes
- 1 tsp Salt
- 1 tsp Pepper
Instructions
- Drizzle oil on the bottom of the slow cooker. Place your chicken in, then add your seasonings and the vegetables then stock. Cover and cook on high for 4 hours or on low for 6 hours. When the chicken is cooked through shred and or pull apart ( most the time it pulls apart as I stir before serving) then serve over cooked pasta or rice, or with a roll.
