Sunshine Bars
There’s nothing like a quick sweet fix during the day to get you going, but even better when it’s a healthier sweet treat. These no-bake bars are similar to LaraBars, and the sweetness comes all from the dried fruit. I picked Apple, Cherries, Pears and Dates to make this, the flavors really went well together and can had the added bonus of coconut but this batch was just the fruit nut combo. They are Vegan friendly, but not considered raw, seeing how dried fruit is usually cooked at a certain temperature. Try to get the unsweetened dried fruit as the sweetened seemed to alter the taste completely. If your fruit is really tough, soak it in warm water before making this. Simply take the fruit out once it’s soften a little ( just a few minutes) and squeeze the water out best you can.
- 1/2 cup dried unsweetened dates
- 1/2 cup dried pears
- 1 cup dried cherries and apples ( I only had half cup each so it created the whole )
- 1 cup walnuts
- Place the dried fruit into the food processor and process until the fruit is small crumbs, it will more or less end up in a sticky glob, just make sure it's all nice and small. Then add in the walnuts to process. If it's too dry ( doubt it) add in a tsp of water, OR lemon juice. Process again , it should be all crumbs. Pour into a glass 8x8 ( for thicker bars) 10.5x6.5 (for thinner bars) baking dish and spread evenly , then press firmly . Set in fridge for an hour and a half or the freezer for less time. Once it's chilled you can cut into squares or bars. Keep refrigerated, will keep for several days in airtight container .
- * You can add in 1/2 tsp lemon zest, 1/4 cup unsweetened coconut flakes, Pecans or almonds can be subbed for the walnuts.
