Sweet Treat Friday – Caramel Corn

My kids eat this stuff up like there’s no tomorrow. Sadly, it also makes a mess on the floor but hey, it’s fun while it  lasts!

Super easy, only takes about 50’ish minutes until you can enjoy some caramel popcorn with the kids. Seems like the fall calls for all things caramel, or is that just me? 🙂

Caramel Corn
 **This is not a recipe to do with the kids. There’s boiling hot sugar, then constantly stirring while the mixture is baking in the oven. They can easily get burned and should stay out of the kitchen while you are making this. Set the kids up at the table with some  crafts, or have them coloring some Halloween coloring pages. Make some Halloween masks out of brown paper bags! That will keep them busy long enough for you to get this done. **

1 cup butter (2 sticks)
2 cups packed brown sugar
1/2 cup corn syrup
1/2 teaspoon salt
1 tablespoon baking soda
2 gallons popped corn.

Preheat oven to 250F
 Combine the butter, brown sugar, corn syrup and salt in a small saucepan. Bring to a boil over high heat (do NOT step away from this, you need to be at the stove the entire time or else you can burn it) Cook about 5 minutes. Add the baking soda and stir hard. Put the popcorn in a roasting pan . Pour the hot sugar mixture over the popcorn and stir well. (This is not something kids should be helping with, the sugar is boiling hot, and they can easily get scowled) Bake in the 250 degree oven and stir every ten minutes or until the corn is completely coated and turns golden brown (about 35-45 minutes)
