Sweet Treat Friday – Shoofly Pie
Shoofly Pie, oh what can I say about this pie. It’s not your average pie, but it’s also that “different” taste that makes you eat more. That’s what I like about it, it’s just so different you need to finish eating it. Sweet tasting and really good warm, you have to at least try this once in your life!
Ingredients
1 recipe for pie dough
1 cup molasses
2/3 cup boiling water
1 teaspoon baking soda
Topping ingredients
3 1/2 cups flour
1 cup sugar
3/4 cups shortening softened
dash of salt
Directions
Preheat the oven to 350F
Make your pie dough as directed and place in a 9 in pie pan. Trim the edges so they don’t over hand. Set aside.
In a large bowl combine the molasses, boiling water, and baking soda. Pour the mixture into the prepared (unbaked) pie shell.
In another large bowl mix the flour with the sugar, shortening and salt. Spread this mixture into the pie shell over the molasses mixture. Bake until the center of the pie is set. It will be about 45 minutes. Cool on wire rack for another 45 minute. Keep the leftovers sealed well, it will keep for a few days.
