Vegan & Gluten Free Banana Bars
I have a handful of banana’s laying around lately and I’ve been trying to use them up left and right, plus plenty of oats, so might as well use what you have on hand right? My kids love trying new things, and they always love a new quick grab and go bar for mornings. This can be a sweet snack, or even a dessert. You can use less chocolate chips too, I made two batches and folded a little into the batter but the kids liked it on top the best.
- 2 1/4 cups gluten free oats processed in a food processor till it looks like flour.
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 3 medium ripe bananas
- 2 teaspoons pure gluten free vanilla extract , you can use non GF
- 1/4 cup applesauce
- 1/4 cup agave nectar
- 1/3 cup vegan chocolate chips
- Preheat oven to 350F. Spray or grease a 8x11 pan, set aside.
- Take your oat flour and place in bowl with the baking powder and baking soda along with salt and cinnamon. Take you banana's and place them along with the applesauce, vanilla extract and agave in the food processor. Blend this till it's creamy.
- Pour your wet mixture into the dry ingredients and mix well. Pour your batter into the prepared pan and sprinkle with the chocolate chips.
- Bake for about 12-15 minutes or until the side start pulling away and a knife inserted into the center comes out clean. It will be soft so don't cook until it's firm. It will feel spongy almost. As long as the edges are golden, pulled away and just slightly firm it's done.
- Cool for about ten minutes before cutting into bars. This is great warm, but can be eaten cold. I really doubt it will ever get completely cooled in this house. My kids ate this up fast!
