      I love getting feedback and emails from you all. Some even email me recipes, which will be posted on My Side of Life sooner or later. Thank you for emailing me, tweeting me and writing all over the Facebook fan page. I love hearing how so many of you are trying new things, and are hooked on it! New things are exciting, and it's addicting. Not only that, you're teaching your kids to try new things as well. How's that for awesome?
 Kids learn from their parents, and they learn young. If ever there was a time to teach your kids the importance of trying something before they judge it, now is  the time. You'd be amazed at the change in their outlook if you encourage them. Have them pick out a recipe with you, have them make it with you, get them involved and make it exciting to do something brand new. Have fun with it, and enjoy, maybe you'll find yourself liking something you didn't when you were a child, you never know!

Now who's ready for the real awesome part?


     This Monday was made that much better when my awesome followers (that's you) flooded Facebook with my links! We made 200 followers here on My Side of Life! We even grabbed us some new followers on Twitter and Facebook! I will admit I sat here refreshing the page as it shot up, glued to the computer and got all excited about it! Hopefully you all stick around with me for awhile, or at least long enough for me to tease you with food pictures :) I promised when we hit 200 I would host a giveaway, so let's get on with it!

Here's a recipe I make to take to gatherings and always get compliments on:

HERBED CHEESE SPREAD
This is a good make-ahead spread for crackers, pitas or celery sticks, or a quick make-it-in-five-minutes snack for a football party.

8 oz whipped butter
16 oz cream cheese
2 cloves garlic
1/2 tsp dried oregano
1/4 tsp each basil, dill weed, black pepper, thyme

Blend all ingredients together in a food processor. Transfer to a bowl or container, and let sit in the refrigerator for two hours or more before serving, to allow the flavors to combine.

easy recipe to try is for flourless peanut butter cookies

1 C Peanut butter
1 1/3 C sugar
1 egg
1 tsp vanilla
dash of salt

Mix all the ingredients. Use a tablespoon to spoon dough onto cookie sheet and use a fork that you wet with water and dip in sugar to flatten the cookies. Bake at 350 for about 7-9 minutes.

BAKED APPLES with GRANOLA

1-1/2 cups low-fat granola
1 teaspoon ground cinnamon
1/2 cup pure maple syrup
6 medium to large Granny Smith apples
3 tablespoons butter
1 cup apple cider
8 ounces vanilla yogurt
1 tablespoon honey

Preheat oven to 350 F.

Place granola, cinnamon and maple syrup in a small bowl and combine well.

Scoop out the core from the top of each apple. Cut a small slice off the bottom so that it sit flat, but do not cut into the core opening.

Stuff each apple with 1/4 cup of the granola mixture and dot with 1/2 tablespoon butter. Place in a shallow baking dish and pour apple cider around apples. Bake the apples, basting occasionally, about 1 hour, or until fork-tender and caramelized.

Mix together yogurt and honey, drizzle over apples.


Makes: 6 servings

Notes: Apple juice can be substituted for apple cider.
1/3 cup of rasins can be added to granola mixture.
Serve with vanilla ice cream.

you should try this super easy dip for chips. We use it when we watch college football
1 pkg of cream cheese
some salsa as much as you like
Mix the two together until it is the consistency you like and start dipping those chips. yummy!!

Recipe? Well, it's not exactly a recipe....just a way to do something.

I brown and season ground beef. Serve it with pita bread sliced down the center. On the table we have different bowls of cheese, olives, shredded carrots, salsa, chick peas, beans....etc. Anything we can find.

This way we can put what we want on ours and add some nutrition without arguing.

I am going to leave my grandmothers meatloaf and mashed recipe, but problem is finding the soup mix :(

All of these are rough measurements because it is done with a sprinkle of this, a dash of that... so it is to the closest measurement.

1lb ground beef (you can opt for turkey if you prefer)
1 package Oxtail Soup Mix (very hard to find)
1 small bag of fresh baby carrots
1/2 lb potatoes
2 cans stewed tomatoes (or fresh if you prefer)
2 eggs
1/2 cup breadcrumbs
1/2 cup grated Parmesan cheese
Dash of garlic fresh or salt
1 can evaporated milk

Mix all ingredients minus 1 can of stewed tomatoes, half the bag of carrots, evaporated milk and potatoes.

Form your meatloaf and place in pan adding in the remaining carrots and second can of stewed tomatoes (you can put a little on the top too) and bake 350-375 for about 30 minutes (some ovens vary and it depends on how well cooked you like your meat).

While baking the meatloaf peel and cut your potatoes and boil them until soft. Strain them and with an electric mixer mix them with the can of evaporated milk, some butter and pepper and any other seasonings to taste (sometimes I add a little sour cream and garlic).

Serve meatloaf over potatoes or separate.
