15 Bean Soup with Easter Ham

Holidays are always fun with a large family because of the leftovers! Whether chicken, turkey or ham, I always make a soup with the left overs the next day.
This year for Easter we had ham and I made a brown sugar glaze, so all that wonderful juice went into the soup, so tasty! This year I had a bag of 15 Bean soup on my hands, pretty sure it was called HamBeen 15 bean soup. These bags come with their own seasoning packets, which I toss right into the garbage so be my guest to do so as well . Most of the taste comes from the ham and glaze from the day before.
Really easy recipe honestly, just takes up time. Soaking the beans for 8 hours is the most time consuming , yet you’re not doing anything at all, great right? Takes about 2-3 hours to cook stove top, but you can also use the slow cooker.
After soaking the beans, I drain them and fill another pot of water with the beans and place my big ham bone complete with chunks of ham still on it. I let this boil for about a bit to make a flavorful broth then turn it down to a simmer while adding in the other vegetables and the chopped ham. That’s about it until you serve it.
