Ham Bean Soup

Holidays are always fun with a large family because of the leftovers! Whether chicken, turkey or ham, I always make a soup with the left overs the next day.

This year for Easter we had ham and I made a brown sugar glaze, so all that wonderful juice went into the soup, so tasty! This year I had a bag of 15 Bean soup on my hands,  pretty sure it was called HamBeen 15 bean soup. These bags come with their own seasoning packets, which I toss right into the garbage  so be my guest to do so as well . Most of the taste comes from the ham and glaze from the day before. 

Really easy recipe honestly, just takes up time. Soaking the beans for 8 hours is the most  time consuming , yet you’re not doing anything at all, great right? 🙂 Takes about 2-3 hours to cook stove top, but you can also use the slow cooker. 

After soaking the beans, I drain them and fill another pot of water with the beans and place my big ham bone complete with chunks of ham still on it. I let this boil for about a bit to make a flavorful broth then turn it down to a simmer while adding in the other vegetables and the chopped ham.  That’s about it until you serve it.

Ingredients
  1. 1 package 15 bean soup bag ( 20 ounces)
  2. 1 left over Ham bone + 1lb of chopped cooked ham ( I usually add a bit more than 1lb, but use how little or more if you'd like )
  3. 4 peppers chopped ( any color)
  4. 2 tomatoes chopped
  5. 2 medium onions chopped
  6. 3 cloves of garlic minced
  7. Pepper
  8. Chili and or Italian seasoning ( depends on the mood I'm in)
Instructions
  1. Soak the bean as directed ( 8 hours)
  2. After the beans have soaked drain and rinse. Place in large pot and place ham bone in the pot, then fill with water till everything is covered. Cook on high heat until boils, lower to about medium high heat keeping a low boil for about an hour. Add in all the other vegetables and the chopped ham ( keep ham bone in the soup!) Add more water if needed, just keep everything covered . Season with pepper and either Chili or Italian seasoning. I sprinkle the entire top with it, stir and let it sit for another 30 minutes before tasting the broth and adding seasonings according . Turn to a simmer until the beans are soft. Remove from heat and serve with bread or biscuits. ** Remove Ham Bone before eating! **
  3. This is also good served over rice.
Notes
  1. * Slow Cooker directions are easy peasy! Soak the beans over night, fill slow cooker beans after rinsing and draining. Place in ham bone, ham and all other vegetables. Cover with water then cool 6 hours on high.
