Apple Cookies

It is finally FALL! Here in Tennessee we didn’t think it would ever be fall. Just about two weeks back we hit our 99th day of temps being over 90. Yup, we missed out on hitting 100, but hey that’s ok because it was just too much heat too long. It was way too hot, and way too dry. The trees around our area were so parched they started just giving up and letting leaves fall dead on the spot. While a few trees have a slight color change we pretty much missed out on fall colors. We had some pretty intense rain and wind this past week, and in the midst of that we had a few days of frost. Car doors were stuck shut, windshield had to be scraped, and BAM back into the 80’s. Mother nature is messing with us. 

Fall can be fun in more ways then one that’s for sure but even with all that happening I always find myself with tons of apples this time of year. It’s fun to try new recipes and or come up with new ways to use apples, this year it’s Apple Cookies! Sweet! They are so soft, I love them, so let’s get to the recipe! 

Just heads up, my normal recipe card plugin isn’t working so I had to use a new one. Not really liking this one so far. It shows you something different in the back-end than it does when it’s published so before I even hit ” save” I was worried my recipe wouldn’t even list ” ingredients ” or the ” directions”  It just showed a list and a really long sentence all smashed together. Previewed though it shows the bold sections to make it easier to look at. Still, I want my other one to work as it’s much quicker to write in. On with the cookies, here you go! They are really simple and delicious!

I added frosting to some, ( recipe is at the bottom) but they are great without! Enjoy!  

Apple Cookies

Soft cookies to enjoy on any fall day!

  • 1 cup sugar
  • 1 /2 cup brown sugar
  • 1 cup butter
  • 2 eggs
  • 3 cups unbleached all purpose flour
  • 2 1/4 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 apples shredded ( use a cheese grate or food processor that shreds)
  1. Preheat Oven to 350F

    2- In large bowl mix all dry ingredients together. Stir and then add in eggs. Mix until well incorporated, then add in the apples. Mix until a nice wet dough forms ( almost like a thick muffin batter) 

    3-Use a small cookie scoop and place on pan. Bake for about 15 minutes or until edges are slightly golden. Cool on wire racks.

I did add frosting so some of these and the family really enjoyed, although I find it way too sweet. One frosted cookie was enough for me! The simple cream cheese frosting recipe is as follows

1/2 cup butter softened 

8 oz cream cheese softened

4 cups powdered sugar

and about 2 tsp cinnamon

  • 1-2 tablespoons milk. optional see my note below 

Beat butter and cream cheese together. Add in half the powdered sugar and beat, slowly add in the remaining sugar – * if using vanilla put this in now, if using milk add only 1 tablespoon at a time, beat and then see how soft the frosting is. If it’s too thick add a little more milk. Even if you do use the vanilla and frosting is too thick add in a small tsp of milk at a time until it’s to your liking. Do NOT add in too much liquid at once or it will be way too runny. Beat until it’s smooth. 

Frost cookies when they are completely cool. 

  • I do not ever use vanilla extract I just don’t like the taste and everything bakes fine without it, but if you prefer it add in 3 tsp vanilla and don’t use milk UNLESS the frosting is too thick.
