Cranberry Apple Quick Bread

My kids ate all the oranges in the house so I didn’t have oranges for this recipe. Instead I used apples, and they really liked it! Great thing about quick breads, besides their ease in making is the ease of mixing things up. I didn’t add the nuts but you can if you want, try to keep the substitutions close together this bread would also be good with apricots and I have made it with pineapple too.

Ingredients 
3 small apples chopped to small pieces 
1 egg beaten
2 tablespoons cooking oil
2 cups flour 
3/4 sugar
1 1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup chopped up cranberries
optional 1/2 cup walnuts
about 1/4 applesauce
Combine eggs, oil, flour baking powder, salt, baking soda together and mix. Add in about 3 tablespoons applesauce and mix again. If it looks too try add a little more applesauce but only until just moistened. This will still be a lumpy batter.  Mix in apples and cranberries and the walnuts. Grease a 8×4 inch loaf pan . 
Cook in a preheated 350 degree oven and about 45-50 minutes or until toothpick inserted in the center comes out clean. Let cool on wire rack and slice to enjoy! 
* If you wanted to make Cranberry Orange Bread, use 3 medium oranges and juice them .You should make about 3/4 cups of juice. Add the juice to the mixture as you would have the apples and applesauce. and fold in cranberries and walnuts. Cook the same.
