Dear Tomatoes

It just doesn’t seem like I tell you I love you enough!

The garden is flooding with Tomatoes now, I am making something every night with them! Salsa took a big chunk out of the ripe ones last weekend ,but two days later I’m nearly to full max again. Even though of course I won’t ever say I have too much, sometimes it does become challenging to find different ways to use them up.
I love tomato sandwiches!The easiest way to eat up a whole tomato, slap it into a sandwich 🙂 Here’s one of my favorites!

Heirloom Tomato sandwiches with Bacon and Basil Aïoli

Bacon and Basil Aïoli-
Ingredients

1 cup mayonnaise
1/3 cup chopped fresh basil
4 slices bacon, cooked and crumbled
Directions

1.In a medium bowl, combine mayonnaise, basil, and bacon. Store covered in refrigerator for up to 3 days.

Heirloom Tomato Sandwich
2.Spread bread with approximately 2 tablespoons Bacon and Basil Aïoli each. Layer each bread slice with 1 lettuce leaf and 2 tomato slices. Sprinkle tomatoes evenly with salt and pepper if desired. Top with remaining bread slices. Serve immediately.

 The Spread is very delisous, a quick, simple way to put a twist on any sandwich. Fresh basil makes a difference here. I used Light mayo as well and it came out just as fine! Enjoy!
