Cheesecake with Strawberry Sauce

This year for Valentine’s Day I made Cheesecake with Strawberry sauce. Really easy to make, I actaully overcooked the cheesecake by a bit but it still tasted great! The sauce is super easy as well to make , you can pour it over the entire cheesecake or individually serve the sauce over servings as you get them. I personally like the sauce warm though my family likes it cold when served, either way is fine. Let’s just jump right into the recipes!

For the crust
  1. 2 cups graham cracker crumbs
  2. 3 tablespoons sugar
  3. 1/3 cup melted butter
For the filling
  1. 16 oz cream cheese softened
  2. 1 cup sugar
  3. 3 tbsp sour cream
  4. ½ tablespoon vanilla extract
  5. 2 eggs
Instructions
  1. For the Crust
  2. Mix the graham cracker crumbs, sugar and melted butter and pack mixture firmly into bottom and slightly up the sides of 9-inch pie pan or springform pan. Set aside
For the filling
  1. Preheat oven to 300F degrees.
  2. Mix cream cheese, sugar, sour cream, vanilla extract in a standing mixer.
  3. Add eggs one at a time to the mixture and thoroughly combine, should be creamy yet thick. You don't want any lumps. Once it's creamed well, pour into the prepared crust .
  4. Bake for about 65-70 minutes or until the sides are firm ( not jiggling,) The edges will be slightly golden and center slightly shiney but still firm where it doesn't shake when you tap the pan. Allow cheesecake to cool completely in the refrigerator before serving (about 3-4 hours)

You can make this sauce with fresh strawberries, just slice them up really well and watch carefully as you heat.

Ingredients
  1. 2 cups frozen strawberries
  2. 1/3 cup granulated sugar
  3. 4 teaspoons fresh lemon juice
Instructions
  1. Heat the strawberries in a sauce pan over medium heat until juice starts to form in the pan. Add in the sugar and lemons, continue to heat until berries are bubbly. Simmer and stir making sure all the strawberries are heated through .
  2. You can serve this over ice cream, cakes, muffins, toast, cheesecake. If needed cold, simple wait till mixture is cooled off at room temp, then fridge for 2 hours before use.
