Recipe Challenge Day 27: Raw Vegan Lasagna

This is a long recipe, but it’s worth it. I got this after finding it on Pinterest. Original recipe is here by Rawamazing.  They had it rolled up, but I don’t have a slicer to slice nice and paper thin so I sliced as thinly as possibly without taking my fingers off. Why do I not have a slicer thingy? This I do not know, I’ll put it on my wish list. It was fun to make no less, and totally worth the time put into it. Healthy, satisfying and tastes amazing!

Ingredients for Lasagna

1 medium zucchini, sliced thin lengthwise
1 tomato, sliced thin
Marinara Sauce
Spinach Walnut Pesto
Cashew Cheese
Walnut Sage Sausage

To make the sauces you need a food processor. Sauce recipes –

Marinara Sauce

1 clove garlic
1 cup sun-dried tomatoes, softened
1/4 cup olive oil
1/2 lemon, juice from
4 dates, soaked until soft and pitted
1 teaspoon Italian spices

 Process  all until smooth transfer to bowl.  Clean the processor out .

Spinach Walnut Pesto

2 cloves garlic
3 cups spinach
1/3 cup olive oil
1/2 cup walnuts, soaked at least 6 hours, drained and dried
1/2 juice from a lemon

Process until a paste is formed transfer to bowl to wait.  Clean the food processor

Cashew Cheese:

3/4 cup cashews, soaked overnight, drained
1 clove garlic
1 teaspoon lemon juice
pinch of salt and pepper

 Pulse until a cottage cheese texture is achieved. Add a little water if necessary, transfer to a bowl set aside and clean the processor out again.

Walnut Sage Sausage

2 cups walnuts, soaked for at least 6 hours in fridge, drained and rinsed
1 teaspoon sage
1 teaspoon thyme
1 teaspoon marjoram
1 teaspoon fresh rosemary, chopped fine
Salt and pepper to taste

 Process until coarse crumb is achieved. You have now made it to the last step!

Now to make the dish. Lay out the zucchini on a plate, you will now layer just like lasagna. sauce, on top, sausage, sauce, zucchini, and repeat.  Alternate and layer it however you want.

Seems like a lot, and yes it takes time to clean it all but really this was so awesome, I loved it so much I made more than a few servings worth so I could have it again. Enjoy!
