Red Beans and Rice

Some days even after I make a weekly meal plan I just want something different, or even unplanned. That’s kinda where the trouble begins, but when you stock up the pantry and have things on hand already it becomes fun as well. This is an easy recipe you can put together on a busy day.

1 package pre-sliced mushrooms
about 2 cups cooked brown rice
1 can red kidney beans rinsed and drained
1 cup or so of diced tomatoes or use a can of diced tomatoes
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 of shredded Cheddar cheese
chopped cilantro

Directions

Heat large nonstick skillet over med. high heat. Coat pan with cooking spray or go for the good old butter! Add mushrooms to pan and cook 6 minutes or so until lightly brown. Stirring occasionally and no crowding. Stir in cooked rice and next 4 ingredients. Cover and bring to a boil, reduce head and simmer or until bean are tender and every things heated.
 Sprinkle with cheese and cilantro! 
 Quick simple, yummy 🙂 I like putting hot sauce in there, or even salsa sometimes. The kids just dump cheese all over it and their good to go, ha !
 You could add things like beef in there, sausage as well to make it meaty or as I did added veggies like corn in it as well. Spice it up any way you like.
