Rolls , Rolls, Rolls, Come and get them!

Can’t believe I have no rolls on the blog yet. If it’s one thing I make a lot besides bread, it’s rolls. Yet somehow, they never made it on here. Now they made it, so come and get them!

 

You just want to eat them all up!

These Dinner Rolls are a family recipe, a must to share as they are truly amazing in every way.
2 pkgs. dry yeast
1/2 c, Luke warm water
1/4 c. cold water
1/2 c. sugar
6 T. butter
2 tsp. salt
2 c. scalded milk
7-8 c. flour
2 eggs, well beaten

Soften yeast in warm water ** mix water in the 1/2 water and let sit for 5 minutes or until the yeast “poofs up” ** In large bowl mix sugar, butter, salt, and milk. Add 1 cup flour and beat until smooth. Add cold water and mix. Add softened yeast, mix well. Add about half of remaining flour. Beat dough until smooth. Beat in eggs. Add enough remaining flour to make a soft dough.
   Turn over on the flour board. Let stand for 5 minutes. Knead 5 minutes or until smooth and elastic. Put in greased bowl, turning over to bring greased side up ** just spray the bowl with Pam and place dough in, spraying the top of the dough) Cover and let rise for 1 1/2 hours or until double in bulk. (DO NOT RUSH)
Punch down and cover again letting rise for 1/2 hour.

Turn out on lightly flowered board. Shape dough in balls, or cloverleafs, fans or any other dinner roll shape. Put on lightly grease baking sheets or pans. If desired as with my Mom’s Famous White bread brush with melted butter on top, you will not be disappointed, trust me!) Add poppy seeds or sesame seeds if your heart desires as well.
Cover and let rise for 15 minutes. Bake at 425F for 15 minutes or until lightly browned.
You can freeze these amazing things which comes in super handy on busy nights, or some holiday dinners. make days before hand and cool completely on racks. Lay in a single layer in freezer bags making sure all the air is out. I double bag mine and freeze them in bags of ten (I double the recipe to make more) That way for dinner I can take out a bag and won’t worry about wasting the rest! <– as if they’d ever go to waste, HA, right.
