So it begins…State Testing

State Testing starts for the kids today. Thankfully we have sunny weather this week, it would be horrible to be cooped up in school and then again when they get home. It’s always a trying week, early bedtimes, groggy mornings sometimes and the moods seem to drop due to the tests. I can’t blame them, it’s not fun to sit and stare at paper throughout the day. I can get them on a better start to the day though, which always starts with breakfast!

I’ve been working hard to get the freezer stocked with breakfast items, pancakes, sausage patties, egg sandwiches and even meatloaf muffins. My kids love eating those in the morning, they are super quick to re-heat and small enough to eat even on a busy morning. Another thing my kids love is Breakfast Ham and Egg cups, these mini frittatas are fresh, full of flavor and great to grab and go. Granola Bars are great for mornings, or snacks, even great for their lunches, I’ve made triple batches to take into their classes this week.

 I’ve also made a menu for their lunches, the better fed they are, the better concentration they have throughout the day. I wanted it to be fun at the same time, so each night I make some different sandwich wraps for their lunches, my kids love Warrior Wraps,

Ingredients For Warrior Wraps
non fat cream cheese, softened
whole green onions, finely chopped
dry nonfat ranch salad dressing mix
whole wheat flour tortillas
low fat turkey breast, roast beef, ham or chicken slices
Lettuce or Spinach
Directions*
Combine cream cheese, green onions and ranch mix, blend until combined.Spread evenly on each tortilla. Place lettuce and top with your choice of meat. Roll up tightly and cut into 1/2 or thirds for a snack friendly wrap. You can wrap with plastic and refrigerate for up to two days.

These wraps get them going and with some fruit on the side I can guarantee they have a better chance of a great day. Dinners will be just as easy to prepare as breakfast and their lunches. As by the time they get home from a day of testing,  the only thing we worry about is what game to play outside. It’s important for them to get a break, play and get all the energy out otherwise the next day they won’t be at their best. This week it’s all about quick , easy and zero stress!
