The almost Vegan Blueberry Granola Bar

I got into a scuffle with these bars. I called them Vegan, yet used honey. Mistake on my part, but you can use agave nectar and be able to safely call these bars vegan! I made two batches, one with honey one with the nectar, I’ll admit I like the one with honey better . Shame on me so thus, you get the “Almost Vegan Blueberry Granola Bar “

Ingredients

1 cup instant oats
1/2 teaspoon vanilla
3 tablespoons unsweetened applesauce
3 tablespoons honey ( or agave nectar for full vegan power!)
1/2 of dried wild blueberries. <- These should be very small, if they are large cut them down you was smaller than pea size here. I used chopped up raisins in the other but the kids preferred the berries. Make sure whatever you use is diced up really small

Stir all ingredients up in a mixing bowl really well for a good couple minutes. Spray a bread pan and dump mix into the bottom of loaf pan. Pack it down nice and firm. Bake at 325F for about 20 minutes or until the edges are slightly browned. Let it cool in pan.
 This makes about 6 bars and my kids adore them enough I have to make a couple batches at once!
