Weekend Recap- Fried Zucchini Cakes

My Garden is bursting with zucchini right now.Besides the peas and beans, the squash are the first to pop up.
While I freeze some, make more in to bread, use in side dishes with dinner or just toss them in salads, it becomes a challenge to find new ways to use the the squash. One of my new favor ways to cook it up, is to pan fry it!

There’s several of these recipes, one I made with Feta Cheese, one with even yogurt (I messed that one up real bad!) and others just tossing shredded zucchini into a pan to fry. This one uses egg, onion and flour to make more of a cake. It tastes like a flat frittata, but the zucchini is amazing in it. I never get around to making dip or sauce to eat these with as my husband and I just gobble them up. We enjoy it with dinner, it’s a great side dish, or even a snack.

Fried Zucchini Cakes

3 medium zucchini shredded (about 4 cups)
1/2 teaspoon salt
1/2 finely chopped onion
1 tablespoon butter or margarine
2 eggs, slightly beaten
1/4 cup flour
Pepper to taste
Cooking oil

Directions
Place the shredded zucchini in a colander and sprinkle with salt. Let it sit for about 30 minutes. Squeeze as much liquid as you can from he zucchini with your hands or press down into the colander.

Heat up a skillet (iron cast works the best!) Cook the onions in the butter over medium head until they are tender.
Transfer the zucchini and onions to a bowl and stir in the eggs and flour along with the pepper.
Heat some oil into a  skillet to the dept of 1/8th of an inch. Drop by tablespoons of batter into the hot oil and flatten with the spoon. They should be about 3inches in diameter to cook evenly through. Cook the cakes over medium heat until golden brown. Each sides takes about 3-4 minutes, be very careful turning them over and removing from the skillet, us a slotted spoon or spatula and drain on paper towels.  If needed add more oil to make the other cakes.

    Oh my I would so LOVE to try this. Dern eating good 🙁 I love all things fried. It's my Mom's fault. She raised me on southern comfort cooking, hehe.
