Broccoli and Pepper Pasta

Spring has sort of finally shown up here in TN. Last week we had temperatures into the 80’s , gorgeous blue skies, a few thunderstorms here and there then what happens this week? We have two nights of freezes and the other day there were snowflakes in the air! Not sure what mother nature is up too but it certainly has kept us on our toes. I’ve had to move the plants into the garage to keep them for freezing and little seedlings are taking a bit longer to grow. Who knows how this summer will be but I know it will be an adventure! 

Let’s get to the recipe, but first I know some of you noticed the last time I changed how the recipe shows up and well it happened again. My recipe card plugin will not work for some reason, yet again, so I will have to use WP Recipe Maker until I find another one as a backup  or the original one I love so much starts working again. At least there’s a recipe for you to enjoy 🙂 

Broccoli and Pepper Pasta is super easy to make, and really tasty. This can easily be done in under and hour, even if you add chicken – just make sure it’s already cooked and you’re good to go. 

Broccoli and Pepper Pasta

  • 3 cup chopped Broccoli
  • 4 cloves garlic minced
  • 1 onion diced
  • 1 cup chopped peppers
  • 1 cup mushrooms chopped
  • 1 cup vegetable stock
  • 2 tbsp flour
  • 2 tbsp extra virgin olive oil
  • 2 tbsp italian seasonings
  • 1 tbsp chili seasonings
  • 1 box family sized pasta of choice, I used spiral
  1. Start heating a large pot of water for the paste. While the water is heating and pasta is cooking you will cook the vegetables and heat up chicken mixture. They are usually done at the same time but you can cook the pasta before so there is no stress. When you drain the pasta set it back into the original pot it cooked in. You will add in the vegetable mixture into this pot for easy cleanup.

  2. Heat up 2 tablespoons Olive oil a large skillet ( or pot)  on medium heat. Add in the peppers, onions,  garlic and mushrooms as well as broccoli. Season with Italian and chili seasonings. Cook this for about 10 minutes while stirring. Add in the stock and flour, stir and Let this cook another fifteen minutes covered on medium heat or until the broccoli is to a desired doneness. Add this mixture to the cooked pasta and stir, then serve. Salt and Pepper to taste.

You can add Chicken to this easily, just add about 2 cups of cooked shredded chicken at the time of adding in the broth, just add about a half of cup extra as the chicken may soak up too much juice before it’s done.
